This is a very versatile, quick and easy to make dough. You can use it for flat bread, pizza or to make cinnamon rolls.
Prep
Pre-heat oven (see notes below for different uses).
Line pan with parchment
Small bowl
Make yeast first and let sit 5 minutes
- 3/4 cup warm water (105-110°)
- 1 Tablespoon honey
- 1 Tablespoon active dry yeast
IMPORTANT NOTE: Yeast mix must get big and bubbly or your dough will be gummy. Make sure the water temp is correct.
Mixing bowl
Add all ingredients below to bowl:
- 1 cup blanched almond flour
- 1 cup arrowroot or tapioca
- 3/4 cup cassava (or 1/4 cup + 2 Tbsp coconut flour sifted)
- 1 tsp psyllium husk
- 1/2 teaspoon salt
- 1 egg
- 1 Tablespoon olive or avocado oil
Add yeast mixture when it has foamed up
Turn mixer on – bring up to medium speed
If too dry, add a little more water
Once blended – let dough sit for 15 minutes to allow the flour to absorb the moisture.
You can either divide the dough to make individual pizzas or roll it out on a sheet pan lined with parchment. Use a little oil on the roller to help it spread easier.
PIZZA
For Detroit style, pat thick layer of dough into a cast iron pan, bake dough for 10 minutes, add mozzerella first and bake another 5 minutes. Add toppings and bake 10 more minutes.
For thinner crust, pat into sheet pan and bake crust at 375° for 20 minutes – add toppings, increase to 425° and bake for another 10 minutes. (Center needs to be 200° internally – use a thermometer)
After baking, turn off oven, crack the door and let it sit for 10 minutes.
Cool on a rack before cutting.
Sauce:
Sautée garlic, onions, bell peppers – add spices (oregano, parsley, sage, rosemary, thyme) – add tomato sauce.
I also like to add a little balsamic.
Topping suggestions:
- Cheese of choice, Spinach, tomatoes, zucchini, olives & jalapeños
- Apples or pears, thinly sliced asparagus, arugula, feta or goat cheese & lemon slices (omit the red sauce and just use olive oil with a little garlic)
Cinnamon Rolls – 350°
Add 1 tsp baking powder to recipe.
Make sure the dough is more on the wet side and sprinkle flour on a piece of parchment paper.
Hand roll the dough into a ball and then start forming it into a tube.
Use a rolling pin to roll the dough into a long, flat rectangle.
Use a brush to spread butter all over the dough.
Sprinkle cinnamon and sweetener of choice (coconut sugar works well here, maple syrup is nice too if you don’t mind the sugar).
Use the parchment paper to help roll the dough into a tube.
Slice into equal parts 1-2” thick.
Bake at 350° for 20 mins – check center for doneness.
for the topping/glaze:
- 1/3 cup coconut cream
- 2 1/2 tbsp pure maple syrup or 1/4 cup coconut sugar
- 1/4 tsp Pure vanilla extract
- Pinch sea salt
