- In a shallow bowl, mix:
- ¾ cup extra virgin olive oil
- 2 tablespoons balsamic vinegar
- ½ cup freshly grated Parmesan cheese
- Stir in:
- 2 tablespoons finely chopped sundried tomatoes
- 1 tablespoon finely chopped Kalamata olives
- 1 tablespoon chopped rosemary
- 1 tablespoon thyme leaves
- 3 crushed garlic cloves
- Sprinkle with:
- 2 teaspoons red chili flakes
- 1 teaspoon sumac
- Zest of 1 lemon
