
Ingredients:
- 1 cup almond flour
- 1/2 cup coconut flour
- 1/4 cup ground flaxseed
- 1/4 cup buckwheat flour
- 2 tablespoons chia seeds
- 2 tablespoons sweetener (I use 50/50 coconut sugar/Allulose)
- 1 and 1/2 teaspoons baking powder
- 1/4 teaspoon salt
- 3 large eggs
- 1/4 cup olive oil
- 1/2 cup unsweetened almond milk
Instructions:
- Preheat oven to 350°F (175°C) and grease a loaf pan.
- Combine all dry ingredients in a large bowl.
- In another bowl, whisk eggs, olive oil, and almond milk. Gradually mix wet ingredients into dry.
- Pour batter into the loaf pan and bake until lightly brown on the outside – for me it was about 50 minutes. Let cool before slicing.
