Avocado Toast on This

Ingredients:

  • 1 cup almond flour
  • 1/2 cup coconut flour
  • 1/4 cup ground flaxseed
  • 1/4 cup buckwheat flour
  • 2 tablespoons chia seeds
  • 2 tablespoons sweetener (I use 50/50 coconut sugar/Allulose)
  • 1 and 1/2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 3 large eggs
  • 1/4 cup olive oil
  • 1/2 cup unsweetened almond milk

Instructions:

  1. Preheat oven to 350°F (175°C) and grease a loaf pan.
  2. Combine all dry ingredients in a large bowl.
  3. In another bowl, whisk eggs, olive oil, and almond milk. Gradually mix wet ingredients into dry.
  4. Pour batter into the loaf pan and bake until lightly brown on the outside – for me it was about 50 minutes. Let cool before slicing.
