
- 1 cup cooked chickpeas or white beans (3/4 cup beans + 3 cups water in instant pot)
- 1/3 cup tahini (see below)
- Lemon juice to taste
- Salt to taste
- Olive oil or water to desired thickness
Start by blending the beans and salt, add tahini & lemon juice. Add olive oil as needed.
Tahini
- 1 cup (140g) sesame seeds
- 2 to 4 tablespoons olive oil
- Pinch of salt
Toast sesame seeds in a pan until they turn light brown. Stay close and stir lightly to keep from burning.
Blend all ingredients until creamy. Start with 2 Tbsp oil and add more to create paint like thickness.
