Fat bombs are one of the main staples in my home.

Why?

Healthy fat (melted coconut oil) – our cells use sugars (incl fruit and carbs) OR fats for energy. Sugars burn toxic – fats burn clean.

Fat bombs help curb my sweet tooth while giving my body energy.

I don’t generally measure, but this is about what I did today:

  • 5 cups raw Valencia peanuts (lightly roasted to release the oils) – you can use any nut you prefer
  • 1/2 cup coconut oil
  • 1/2 cup cacao (you can also use cocoa)
  • 1/3 cup sweetener (optional) – I use 50/50 Allulose & coconut sugar
  • Celtic or Himalayan sea salt to taste

Directions:

Roast nuts at 350° for 20-30 minutes until lightly roasted.

Grind the nuts with salt until you have a smooth butter.

Add melted coconut oil, cacao, and sweetener of choice.

Pour into mini baking cups (I use parchment) and set in freezer for 15 minutes. Store in freezer or refrigerator.

Options:

Change it up and add goodness to them as desired…I like walnut butter with raspberries and pecan butter with coconut

Peanuts are susceptible to a specific mold that produces aflatoxin (which can cause cancer and liver damage). Valencia peanuts are grown in dryer climates (mainly New Mexico) less susceptible to aflatoxins. Peanuts are actually legumes, higher in protein than other nuts and contain oleic acid, the healthful fat found in olive oil as well as vitamin E, niacin, folate, and manganese.

Coconut oil is high in medium chain triglyceride (MCT’s) which are absorbed straight into the liver which then quickly converts into energy. MCTs have been shown to improve cognitive function, boost energy levels, fight bacterial infection and viruses, aid digestion, protects the liver and contains Laurie acid (boosts the immune system). MCTs help you feel full and boost metabolism, and it is especially effective in reducing abdominal fat (which lodges in the abdominal cavity and around organs).

Cacao is made from raw cacao beans and is high in fiber, magnesium, manganese, and protein. Cocoa is produced at high temperatures, losing some of the nutritional benefit.
